Gochujang or red chili paste is a savoury, sweet, and spicy fermented condiment popular in Korean cooking. The sweetness comes from the starch of cooked glutinous rice, cultured with saccharifying enzymes during the fermentation process. A little gochujang goes a long way. Use it as a base ingredient in Korean dishes, soups, stews and stir-fries. Its spicy flavour means it also works well as a marinade or with tacos and burgers. Gochujang is used in various dishes such as bibimbap and tteokbokki, and in salads, stews, soups, and marinated meat dishes.
