Panang curry originates from Thailand’s central region, but its popularity quickly spread as people moved to find work elsewhere. It is this very paste which gives panang curry its unique flavour consisting of a punchy and zesty blend of red chilli, kaffir lime zest, galangal, spices, garlic, shrimp paste and roasted peanuts. The most common use for Panang curry paste is in curries and stews. Cook the curry paste in a little oil first to bring out its flavours, then coat proteins like chicken, pork, or tofu; and vegetables with the warmed paste.
