Vanilla beans are one of those ingredients that transform any dish into decadent deliciousness. Polenta is a coarsely ground cornmeal, which makes the end product less mushy, and it has a little more bite to it than the usual cornmeal. Polenta is also billed as an ingredient, and in recipes, the term is often used interchangeably with cornmeal. Polenta is used as the base for the vegetarian main dish, topped with sauce or a hearty vegetable ragoût. Served instead of pasta or rice as an accompaniment to meat sauces, stews, or chilis. Polenta is also used as a hot breakfast cereal, topped with fresh or dried fruit, nuts, cinnamon, and milk.
